Tumpeng Merdeka for the 74th Independence Day

Fifteen students took part in Tumpeng Festival on Tuesday (8/20). They were divided into 3 groups. Each group competed to show their best creations according to the theme and had to finish everything in 3 hours.

"Students feel very challenged. Racing against a limited time of only three hours. Preparing ingredients, cooking, then plating and buffet decorating. After that, they also have to present their products in English, "said Chef Santos, the Culinary lecturer and also the person in charge of the festival.

This Tumpeng Festival was considered as a special event because this time the festival was used as the assessment media and also as a symbol of participation in commemorating the 74th Independence Day of the Republic of Indonesia.

"Every menu, display, presentation is assessed and accumulated into the student's final grade," explained Chef Santos.

Chef Santos further explained that the assessment points were based on taste & flavor, texture, appearance of dishes, table decorations, costumes, group presentations and theme suitability.

"Commonly Tumpeng is in yellow, as today’s theme is Independence Day, we choose Tumpeng in red and white color representing Indonesia’s national flag color. This is a form of gratitude for the grace of Indonesia’s independence that we have enjoyed so far," he said.

Students’ performance, continued Chef Santos, were quite satisfying. Leadership skill of each group leader succeeded in establishing cooperation as a team. They shared the tasks of processing Tumpeng and the side dishes.

"The side dishes served with Tumpeng are quite many. They can work together cooking Nasi Kuning (Yellow Rice), Nasi Liwet Merah Putih (Red and White Liwet Rice), Kering Tempe, Ayam Bumbu Rujak, Sambal Goreng Kentang Ati, Perkedel, Mie Jawa (Javanese Noodle). They also showed their sides of creativity, "he commended.
