Novida Won 1st Champion Main Course Plating

Tristar Institute Batu students successfully made achievements in the culinary field again. Last Saturday (19/9/2020) two students of the D3 Hotel Management program, Novida Dwi Khumairoh and Anggi Dermawan, took part in the “Rare East Java Cuisine Plating Challenge 2020” competition and succeeded in becoming the General Champion.

Located at Luminor Hotel Jemursari Surabaya, Novida and Anggi participated individually and competed with the other 29 participants to create innovative dishes with the most attractive display of plating.

The "Rare East Java Cuisine Plating Challenge 2020" competition was held by ICA BPD Jatim (East Java Region of Indonesian Chef Association) in collaboration with 3 stared hotels: Mercure Grand Mirama Hotel Surabaya, Luminor Hotel Surabaya, and Surabaya Suites Hotel with the aim of creating, upgrading, and preserving local culinary delights, especially from East Java. It’s expected that they are better known and able to compete in the global culinary industry. Quoted from, Elgar Gumilang, the Marketing Communication Manager of Luminor Hotel Surabaya said that even though a dish is made from local/traditional ingredients, the food must still look modern and appetizing. It must not be inferior compared to the international food presentation. Therefore, "plating skill" deserves to be viewed more highly because with that skill the value of food can be uplifted.

The judging process is also carried out by highly experienced Professional Chefs. Therefore, the Novida, Anggi, and other participants can get new insight and more knowledge about the culinary field. The determination of winners is divided into 3 categories: General Champion was seen from the taste and plating presentation of the dish, Favorite Winner was seen from the plating presentation, and the Social Media Winner was decided based on the number of viewers on Instagram live while in the plating process.  

The theme for this competition was processing milkfish and purple sweet potato. And Novida Dwi Khumairoh from Tristar Institute Batu succeeded to present dishes of processed milkfish and purple sweet potatoes with the best taste and plating presentation compared to all of the other participants which made her won the General Champion title.

Personally, Anggi and Novida feel happy to be able to participate and hone their skills through this competition. Insight and knowledge from the professional and experienced chefs motivated them to learn more and continue to be creative, especially in Plating Skills.
