Being famous as a country with rich of cultures, Indonesia is also known as a paradise of traditional cuisine. A lot of traditional dishes are influenced by and related to cultures in this country. One of the famous dish is Tumpeng. Tumpeng is a tall cone-shaped rice dish served on a wide woven bamboo tray called Tampah. Originally, Tumpeng has Javanese root but in 2014 the Indonesian Ministry of Tourism and Creative Economy promoted it as one of the official national dishes of Indonesia. Tumpeng is a symbol of gratitude; therefore, it traditionally featured in a Selamatan or Kenduri (for celebration or gratitude ceremony). On the Tampah, Tumpeng is usually served and decorated with other side dishes which are full of philosophical meaning. The side dishes are made of vegetables, meat, chicken, Tempe, eggs, etc.
In order to complete the Indonesian Cuisine subject, students of Exclusive Culinary program of Tristar Culinary Institute Batu had to hold a 3-day Indonesian Food Festival from November 14th – 16th, 2018. Commonly, the rice dish in Tumpeng is plain steamed rice, Uduk rice, or Yellow rice. Yet, in this festival Tristar students offered not only Uduk rice and Yellow rice, but also other innovation of rice dishes, i.e., Green rice (using spinach and coconut milk) and Black rice (using coconut milk and Kluwak nuts or Pangium edule). The rice was served with some side dishes: Ayam Bumbu Rujak, Perkedel, Sambal Goreng Kentang Hati, Kering Tempe, Mi Jawa, and Telur Dadar.
During the festival, students of Exclusive Culinary program were divided into four groups and challenged to battle each other. With 7 up to 8 students in each group, they had to make Tumpeng creations and competed in presenting the Tumpeng nicely. Buffet decoration, time management, hygiene, efficiency in food production, and taste were the aspects to be evaluated. Through this Battle challenge, the students can gain leadership and coordinating skills. Therefore, it is expected that the alumni of Tristar Culinary Institute Batu have not only good cooking skill but also good interpersonal skills like leadership, communication, teamwork, and problem solving.
